Ingredients2 lbs baby potatoes, diced into 1 inch cubes
1/4 cup olive oil
3 garlic cloves
1/4 cup red wine vinegar
1/2 t cumin
1 t chili powder
1 diced red onion
- Combine vinegar, cumin and chili powder. Add in the potatoes and let sit for about 5 minutes.
- Toss with olive oil and saute in a dutch oven. Saute for about 20 minutes, stiring frequently.
- Add in the red onion.
- Move the dutch oven into your oven, preheated to about 350 degrees.
- Roast the potatoes until they are crispy on the outside and soft in the center, about 20 minutes.
